Quick Cucumber and Bok Choy "Kimchi"

1 1/2 cups rice wine vinegar

2 tbsp honey

2 large cloves garlic peeled and crushed

1 chopped red chili pepper OR 1 tbsp red pepper flakes

1 head bok choy chopped

1 large cucumber thin half-moon sliced

1 small red onion thin sliced

4 radishes thin sliced

Salt and pepper to taste

1 bunch chopped cilantro

1 tbsp sesame oil

 

Toss bok choy, cucumber, onion, radish, salt and pepper in a non-reactive bowl (like glass). Mix together vinegar, honey, garlic and chili pepper and bring to a boil. Once boiling, pour over veggies. Toss all ingredients and let cool completely. Add cilantro and sesame oil. Toss again and serve as a side or as a relish with Asian tacos or carnitas.
