Grilled Bok Choy with Soy Glaze

1 head bok choy
1 cup soy sauce
1/8 cup brown sugar
Zest of 1/2 lime
Juice of 1/2 lime
Stir soy sauce and brown sugar and bring to a boil, then reduce heat. Simmer until reduced by half, stirring occasionally. Add lime juice and zest at the end and remove from heat.
Cut bok choy lengthwise down the middle. Rub with olive oil and sprinkle with salt and pepper. Grill flat side down on medium heat for 4 minutes, then rotate a quarter turn for grill marks and leave for 4 minutes, flip over and brush with soy glaze. Leave 4 more minutes then rotate another quarter turn and brush again. Flip one more time, brush on a good layer of glaze and then remove from heat. Salt and pepper to taste and a sprinkle of toasted sesame seeds to garnish.
