Potato Galette w/ Caraway Seeds and Sweet Onions

This recipe called my name for multiple reasons--the rendered fat I have saved in my fridge from when I cooked my first duck a couple weeks ago; the whole caraway seeds I discovered while organizing my spice cabinet the other day that I’m determined to use more; the fact that galettes keep popping up in my life but I don’t really know what they are all about. Cheers to trying new things!
